Latkes are a popular dish that is served on the Jewish holiday Hanukkah. They are also know as potato pancakes and served with applesauce. These delightfully light pancakes go back as far as the Middle Ages and the Ashkenazi Jews have prepared them since the mid 1800′. Not all Latkes are made from potato’s. Some are made with cheese and other dairy that look more like the pancakes that are served with butter and syrup.
